in case you are wondering about the shorts and short sleeve shirt in the middle of january, the high temperature for that day was 74°. gotta love TEXAS winters!
we have been loving all the delicious juicy lemons from my parent's lemon tree! one of my favorite things to make with them is lemon bars.
i got this recipe off the internet a few years ago and modified it. it is my favorite.
Crust:
1 1/2 cups flour
3/4 cup confectioners' sugar
10 tablespoons butter, melted
Topping:
4 eggs
1 1/3 cups granulated sugar
1/2 teaspoon salt
1/3 cup flour
3 large lemons, juiced
Directions:
Preheat oven to 350. Grease a 9x11 or 9x13 pan.
Sift the flour and confectioners'sugar in bowl. Add the melted butter. Mix and evenly press into the bottom of pan.
Bake for about 20 minutes, or until light golden brown. In a large bowl whisk eggs until light, pale and fluffy. Add the sugar and salt, stir well. Sift the flour into the egg mixture and whisk until smooth. Stir in lemon juice. Pour mixture onto warm or cold crust. Bake 25-35 minutes. The topping should be set but slightly jiggly. Cool before cutting into bars.
